Asian Beef Salad
Serves 3 - 4
This provides a good counterpoint between the heat of the grilled beef served with fresh herbs over greens, tomatoes and cucumbers
1 pound filet mignon or loin 4 Tbsp. lime juice 3 Tbsp. fish sauce ½ chili powder 2 Tbsp. roasted rice powder (available in Asian grocery stores) ½ Tbsp. brown sugar 2 Tbsp. scallions 2 Tbsp. cilantro, coarsely chopped 1 Tbsp. lemongrass, thinly sliced 2 Tbsp. shallots, thinly sliced ¼ cup mint leaves
- Slice the beef thinly, across the grain.
- Stir fry quickly until cooked to medium. Transfer to a bowl.
- Stir together lime juice, fish sauce, brown sugar, chili powder and rice powder.
- Add to the beef. Mix together with the fresh herbs, scallions and shallots.
- Serve over lettuce then add tomatoes and cucumbers.
