ORANGE, JICAMA and RED ONION SALAD With CILANTRO DRESSING Serves 4
For the salad;
1c red onion julienne 1c jicama julienne 4 eating oranges peeled 1T fine diced jalapenos 1/3 c chopped cilantro
Method;
Peel and slice the oranges about 3/8 inches thick.
Arrange the oranges on a platter, garnish with the julienne of jicama and red onion. Sprinkle the jalapenos and cilantro over the platter and drizzle with the dressing.
For the dressing;
1/3 c olive oil 1/3c orange juice 1/4c sherry vinegar 1/2t cumin 1/2t coriander 1/4t cinnamon 1/4c chopped cilantro Hot sauce to taste s&p
Method;
Combine all ingredients in a bowl and whisk together.
