HUNGARIAN GOULASH SOUP
3 quarts

A full flavored satisfying stew –style soup is a perfect dish to ward off the outside cold.

4 ounces bacon, small dice
4 ounces canola oil
2 cups onions
2 pounds beef shank, small dice
6-8 tbsp. Hungarian paprika
4 garlic cloves, minced
2 tbsp. flour
¾ gallon beef stock
2 tbsp. tomato paste
4 cups potatoes, small dice
2 tsp. each marjoram, caraway seeds
2 bay leaves

Heat beef stock and hold.

Render bacon, add onions and sauté until lightly browned. Remove
onions and bacon from pan, leaving the bacon fat in pan. Add canola oil.

Increase heat, add diced beef and sear until evenly browned.

Return bacon and onions to pan with the beef, flour, tomato paste and seasonings. Add 1 cup of warm stock to this mixture, stirring well to blend the flour and tomato paste. When smooth, continue adding stock.

Bring to a boil and simmer 45 – 1 hour or until beef is tender.
Add diced potatoes; simmer for about 10 minutes or until potatoes are tender.
Adjust seasoning with salt and pepper.
