Braised Pork Tenderloin in Soft Tacos with BBQ Onions and Avocado Salsa.
BBQ Onions 1 Tbsp. olive oil 1 1/2lbs. sweet onions, peeled and sliced 1/4 inch thick 1 1/2Tbsp. barbecue spices 2 cups of cooking liquid from the pork
Heat oil in a sauté pan over medium-high heat. Toss sliced onions and BBQ spice mix in the pan and cook until just tender, about 3–5 minutes. Reduce heat to medium and add cooking liquid from the pork. Let simmer slowly for about 10 minutes. Remove from heat and let cool, then transfer to a bowl.
Avocado salsa 4 Large avocados, peeled, seeded and diced 1/2 inch size 1/2 cup sour cream 1/4 cup tomatoes, diced 2 Tbsp. lime juice 1 Tbsp. hot sauce 1/4 cup cilantro, chopped 1/2 Tbsp. garlic, minced Salt and pepper
Combine all ingredients in a bowl. Mash together to create a slightly chunky consistency. Transfer to a bowl to serve.
Assembly: Slice pork and place on a platter. Drizzle with remaining cooking liquid. Warm 12–18 6 inch flour tortillas and place in a basket then cover with a cloth napkin. Set out BBQ Onions, Avocado Salsa, grated cheese, roasted jalapeños and salsa on the table alongside the pork. Have guests make their own tacos!
