This Southwestern inspired dish gives your guests the chance to mix and match items and create their own combinations. We have included recipes for 2 easy condiments, but Whole Foods Market is full of other items you can use — salsas, guacamoles, sambals, roasted peppers, salads and cheeses — the possibilities are endless!



Braised Pork Tenderloin in Soft Tacos with BBQ Onions and Avocado Salsa

serves 12

Pork
2 1/2lb. pork tenderloin
Salt and pepper
1 Tbsp. olive oil  
1/4 cup Worcestershire sauce
1 cup ketchup
1 cup dark beer
1 pint beef stock
1 cup orange juice
1 Tbsp. orange zest
1 cup onions, finely chopped
2 Tbsp. garlic, minced
2 Tbsp. brown sugar
2 Tbsp. molasses
1 Tbsp. hot sauce
1/2 cup BBQ sauce
1 Tbsp. cumin
2 tsp. coriander 

Heat oil in a sauté pan over high heat, season pork with salt and pepper then sear on each side for 3–4 minutes. Transfer pork to a medium-sized casserole dish and set aside. Mix all remaining ingredients well and pour over the pork. Cover and bake at 350oF for about 1 hour. Remove casserole from oven and take pork out of the cooking liquid and set pork aside until you are ready to serve. Over medium heat, reduce cooking liquid down to a sauce consistency, about 8-10 minutes. Strain and set aside for use with onions.
