A very simple preparation for this warm and satisfying appetizer is made even easier by using store bought biscuits or ones made from purchased dough. The peach spread can be made well in advance of your party and can be used as an all purpose condiment for a myriad of roasts, breads or on sandwiches.



Country Ham Biscuits with Peach & Mustard Spread

serves 12

24 store-made 2 1/2 inch diameter biscuits or home made from store bought dough
1 1/2 lbs. thinly sliced country style ham
1 lb. dried peaches, diced into 1/4 inch pieces
1/2 cup small diced red pepper
1/4 cup scallion greens chopped
1/2 Tbsp. minced garlic
1/2 cup rice vinegar
1/2 cup stock or water
2 Tbsp. lime juice
1/2 cup light brown sugar
1 tsp. cinnamon
1 tsp. dry ginger
1/2 cup Dijon mustard


Soak diced peaches in warm water until soft, about 1 hour, then drain. In a sauce pot over medium heat combine rice vinegar, stock or water, lime juice, sugar, cinnamon, ginger. Bring to a boil then reduce heat, let simmer 5–7 minutes. Add the peaches, scallions, garlic, peppers and mustard, let simmer 5 minutes. Remove from heat and cool to room temperature. Note: May be stored in the refrigerator for up to one week before using. Split biscuits and lay out tops and bottoms separately on an oven safe platter. Spread tops and bottoms with peach spread. Place a few slices of thinly sliced ham on each biscuit bottom, and cover with the biscuit top. Just before serving, put platter with biscuits in a 250oF oven for 3–5 minutes to take off the chill. Serve immediately.


Beverage Suggestions:
Mulled or regular cider, spiced wine or pilsner-style beer.
