This satisfing and very simple dish is great by itself, with raw vegetables, pita or flat bread. It can also be served as an accompaniment to a salad or as a reception dish.
Hummus With Flat Bread Serves Four
Ingredients: 1C dry chick peas ¼ C lemon juice 2t lemon zest fine ¼ C Tahini paste 1T rice vinegar 3T olive oil 1Tgarlic puree 1-2t Harissa Paste (depending on how hot you like it) 1T chopped parsley
2 loaves of Pita or other Middle Eastern Flat Bread.
Method: 1) Clean and soak chick peas overnight 2) Drain and put chick peas in 2 qt. pot cover with water by 2-3 inches, cook until chick peas are very tender 80-90 min. 3) Combine chick peas and remaining ingredients except flat bread in blender or food processor and puree very smooth. 4) Adjust seasoning. Serve with toasted flat bread.
