This warm and soothing dessert is the reason ice cream was invented. The slight zip from the candied ginger and the crunch of the pecans give an unexpected finish to this all time favorite.
Granny Smith Apple Cobbler 4 – 6 portions
For the Filling
4 c. peeled and sliced Granny Smith apples
1 1/2 T. corn starch
3 T. light brown sugar
3 T. white sugar
1 T. lime juice
2 t. cinnamon
1 t. lime zest
2 T. minced candied ginger
1/2c raisins
1/2c chopped pecans
Preheat oven to 400 degrees.
1. Combine all ingredients, fold together to coat.
2. Put mix in oven proof baking dish
For the Topping
¾ c. butter
½ c. light brown sugar
¼ c. granulated sugar
2 c. cake flour
1 t. baking powder
½ t. salt
¼ - ½ c. water
½ c. chopped pecans
¼ c. buttermilk or cream
1 egg yolk
Topping Method
1. Mix two sugars and butter until soft and well blended.
2. Sift dry ingredients together and blend into butter mix.
3. Add nuts and mix in well.
4. Add water as needed to form crumbly dough
5. Drop dough mix around on top of fruit filling to cover (small holes are o.k.)
6. Mix cream and yolk well and lightly brush onto dough.
7. Bake 35 – 40 minutes in 400 degree oven. Until golden brown on top
8. Serve warm with whipped cream or ice cream.
