Grilled Swordfish with Moroccan Spice Marinade

4, 6 oz. portions of swordfish
2 tbsp. fresh lemon juice
¼ tsp. saffron threads, steeped in 3 tbsp. water for 30 minutes
3 tbsp. cilantro, chopped
3 tbsp. parsley, chopped
2 cloves garlic, minced
2 tsp. paprika
2 tsp. cumin
1 tsp. pepper
½ tsp. cinnamon
½ tsp. ground ginger
1 tsp. salt
6 tbsp. olive oil

Marinade

  • Mix spices, cilantro and parsley with lemon juice. Whisk in olive oil. Pour over fish in a glass dish. Marinade for 2 hours.
  • Grill for 4 minute on each side. Check seasoning and serve immediately.
