Grilled Salmon with Plum Sauce
Serves 6

4 ripe plums, unpeeled, pitted, chopped into small dice
2 tablespoons fresh ginger, peeled and minced
¼ cup unseasoned rice wine vinegar
6 salmon fillets (with skin) 8 ounces, each
3 tablespoons olive oil
1 tablespoon salt
2 tablespoons black pepper
½ cup plum sauce
¼ cup scallions, thinly sliced on the bias
3 tablespoons sesame seeds, toasted

  • Stir together plums, ginger and vinegar. Hold.
  • Have grill ready.
  • Rub salmon filets with oil, salt and pepper on both sides. Grill, skinless side first, turning once, about 5-6 minutes per side. Brush with plum sauce on non-skin side for the last 30 seconds of grilling.
  • Place filets on serving platter. Garnish with scallions and sesame seeds. Serve plum relish on the side.
