Fresh Corn and Green Bean Salad
Serves 4

¼ c. olive oil
1 T. chopped garlic
3 T. lemon juice
2 t. fresh thyme, chopped
2 t. fresh tarragon chopped
2 t. fresh basil chopped
2 t. chives, chopped
2 t. chopped parsley
½ t. dry mustard
 
1. Combine all ingredients


For the Salad

½ c. cooked corn kernels
¼ c. julienne red onion
¾ c. cooked and julienne green beans
¼ c. red pepper diced
2 T. scallions, diced
1/3 c. diced tomato

1. Combine all vegetables
2. Toss with dressing
3. Serve from platter or bowl
