Mixed Baby Greens and Herbs of Summer
4 servings

2 cups mixed baby greens such as dandelion greens, beet shoots, arugala and any fresh garden lettuces
¾ cup of fresh herbs such as chervil, thyme, parsley tarragon and thyme; chopped
1 cup garlic croutons (can be homemade of a good quality homemade store bought Lemon Vinaigrette with garlic
¼ tsp. Dijon mustard
¼ cup fresh lemon juice
½ cup olive oil
¼ tsp. garlic, minced
1 stalk lemon grass, white part only, grated

  • Combine greens and herbs. Toss with vinaigrette. Season with salt and pepper. Garnish with garlic croutons.
