Fiesta Jalapeno Lemon BBQ Chicken
Serves 4


Like a walk down San Antonio’s River Walk, hot, sweet and tangy; all the flavors of a Fiesta. This sauce will have you longing for the Lone Star in no time


For the sauce/ baste

1T bacon fat
1/2c diced onion
1T chopped garlic
1T fine diced jalapenos
½ c ketchup
2t lemon juice
2T cider vinegar
1T molasses
1T brown sugar
1t dry mustard
2t lemon zest
1-2 t hot sauce


Method

1) sauté the onions, garlic and jalapenos in the bacon fat for about 3 minutes

2) add the remaining ingredients and let simmer for 20 minutes

3) remove from heat and cool to room temperature

 

For the spice mix

1/2T cumin
1/2T coriander
1/2T chili powder
1t brown sugar
1t lemon zest
1t black pepper
1t dry mustard


Method

1) combine all ingredients and hold sealed for service



For the chicken

1-  3and1/2 # chicken cut into 8 pieces


Method


1) preheat charcoal or gas grill

2) wash trim and dry chicken well and rub with spice mix from above

3) cook chicken until it is 2/3’s done on the grill, about 15 minutes turning as needed to prevent burning

4) baste the chicken with the sauce and either move the pieces to a lower heat area of the grill or turn down the heat. Let cook slowly for about 8-10 minutes more until COMPLETELY cooked with no red left on the bone.

5) remove chicken from the grill and serve with extra BBQ baste on the side
