Chorizo and Potato with Chipotle

Serves 4

The chorizo is a take on an Oktoberfest theme, while the chipotle lights it up.


1/4 cup canola oil
1 large onion, diced small
2 tbsp. pureed chipotle
4 spanish chorizo links (10-12 oz.), dried, spicy pork sausage, quartered lenthwise and cut in 1/4" thick pieces
3 cups bliss potatoes, cut into sixths, parcooked 2-3 minutes, reserve
1 cup chopped cilantro
1/3 cup hulled (green) pumpkin seeds, toasted

  • Heat oil in a 12-inch pan.
  • Add onion, cook for 2-3 minutes, add garlic and cook for an additional minute.
  • Add cumin and chipotle and cook for 2-3 minutes. Remove from pan
  • Add chorizo to pan with 1 tbsp. of oil.
  • Saute for 3-4 minutes or until sausage begins to brown.
  • Add potatoes and reserved onion and garlic mixture.
  • Stir until potatoes are heated through.
  • Check seasoning, garnish with pumpkin seeds and cilantro.
