Chilled Cucumber Soup

Serves 6

This soup has a similar flavor profile of the Indian condiment raita.

5 cucumbers
½ cup of chopped cilantro
¼ cup of chopped mint
4 scallions, finely minced
1 tbsp. cumin
3 oz. fresh lemon juice
1 qt. Buttermilk
1 ¾ cups of yogurt

  • Peel cucumbers and cut them in half lengthwise.
  • Remove seed and coarsely chop.
  • Sprinkle the cucumber with salt. Place in a strainer for 30 minutes to remove excess moisture.
  • Place the cucumbers, lemon juice, cumin and buttermilk in a food processor. Pulse until smooth. Remove.
  • To the cucumber mixture, stir in the scallions, cilantro, mint and yogurts.
  •  Season with salt and pepper.
  • Chill thoroughly before serving.
